Ingredients

For the steaks

  • 4 filet mignon steaks (about 6 oz each)

  • Salt and freshly ground black pepper, to taste

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 3 cloves garlic, smashed

  • 2 sprigs fresh rosemary or thyme (optional)

For the shrimp

  • 1 lb (450 g) large shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1/2 tsp smoked paprika

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste

For the creamy garlic butter sauce

  • 2 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1/2 cup dry white wine (or chicken broth)

  • 1 cup heavy cream

  • 1/3 cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • Chopped fresh parsley, for garnish

Instructions

1) Get the steaks ready

  1. Pat the filet mignon dry with paper towels. This helps you get that gorgeous sear.

  2. Season both sides generously with salt and black pepper.

  3. Let the steaks sit at room temperature for about 15 minutes while you prep everything else.

2) Sear and baste the steaks

  1. Heat a large cast iron skillet over medium-high heat. Add the olive oil.

  2. When the oil is hot, place the steaks in the pan. Sear for 3–4 minutes per side, depending on thickness and your preferred doneness.

  3. During the last minute, add the butter, smashed garlic, and rosemary or thyme (if using).

  4. Taste and adjust salt and pepper.

6) Bring it all together

  1. Return the steaks and shrimp to the pan.

  2. Spoon sauce over everything and let it warm through for about 1 minute.

  3. Sprinkle with chopped parsley and serve immediately.
