Creamy Mushroom Chicken Meatballs
These are the kind of meatballs that make you forget you ever needed beef. Seriously. Creamy mushroom chicken meatballs are tender, savory, and absolutely smothered in a velvety mushroom sauce that tastes like something you’d order at a cozy little bistro — except you’re making it in your own kitchen, in one skillet, in under an hour.
What makes this dish so comforting is the whole vibe: the gentle sizzle of meatballs browning in the pan, the buttery mushrooms soaking up all those flavors, and then the moment the cream and Parmesan melt together into a silky sauce that smells like garlic and warmth. It’s the kind of dinner that feels like you’ve been cooking all day — but you haven’t. And everyone’s going to want extra sauce. (Plan accordingly.)
This is perfect for weeknights when you want something hearty, or for weekends when you’re craving a “real meal” that still doesn’t take forever.

Ingredients
For the Chicken Meatballs
1 1/2 pounds ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil (for frying)
For the Creamy Mushroom Sauce
2 tablespoons butter
8 ounces mushrooms, sliced
1 small onion, finely diced
2 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and black pepper, to taste
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
1. Mix the Meatballs
In a large bowl, add the ground chicken, breadcrumbs, Parmesan, egg, minced garlic, onion powder, thyme, salt, and pepper.
Mix gently until everything is just combined. Try not to overwork it — that’s the secret to tender meatballs.
2. Shape Them Up
Roll the mixture into evenly sized meatballs, about 1 to 1 1/2 inches wide. If the mixture feels a little sticky, lightly dampen your hands — it helps a lot.
3. Brown the Meatballs
Heat the olive oil in a large skillet over medium heat. Add the meatballs in batches so they have room to brown.
Cook for about 6–8 minutes, turning occasionally, until they’re browned on all sides and cooked through.
Transfer them to a plate and set aside. (And yes, they will smell amazing already.)
4. Sauté the Onion, Garlic, and Mushrooms
In the same skillet, melt the butter over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
Stir in the garlic and mushrooms. Cook for 5–6 minutes, until the mushrooms are tender and lightly browned. They’ll release moisture first, then start to get golden — that’s when they’re at their best.
5. Build the Sauce
Sprinkle the flour over the mushroom mixture and stir well. Let it cook for a minute so the flour doesn’t taste raw.
Slowly pour in the chicken broth while stirring, scraping up any bits from the bottom of the pan. Simmer for 2–3 minutes until it thickens slightly.
6. Make It Creamy
Pour in the heavy cream and stir. Then add the Parmesan cheese. Let the sauce cook for 3–4 minutes, stirring gently, until it becomes smooth, creamy, and glossy.
Taste and adjust salt and pepper as needed.
7. Bring It All Together
Return the meatballs to the skillet. Spoon the sauce over them so they’re nicely coated.
Simmer for about 5 minutes, just long enough for everything to warm through and soak up that creamy mushroom goodness.
8. Garnish and Serve
Sprinkle with fresh parsley right before serving. It adds a little freshness and makes the whole dish look extra inviting.
Presentation
Serve these meatballs over pasta, rice, or mashed potatoes — anything that can catch and hold that sauce. For a cozy finish, add a little extra Parmesan on top and a sprinkle of parsley.
If you want to make it feel even more “dinner party,” pile the meatballs in a shallow bowl, spoon extra sauce over the top, and add a few sautéed mushrooms right on top for texture. A slice of crusty bread on the side is never a bad idea — especially when the sauce is this good.
