Creamy White Chicken Enchiladas

For the Enchiladas
3 cups cooked chicken breast, shredded
8 large flour tortillas
2 cups shredded Monterey Jack cheese
1 cup shredded mozzarella cheese
1 tablespoon olive oil

3 tablespoons butter
3 tablespoons all-purpose flour
2 cups chicken broth
1 cup sour cream
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground cumin

1 cup diced fresh tomatoes
2 tablespoons fresh cilantro, chopped
Instructions
1. Preheat and Prep
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. This makes serving easier later — and keeps cleanup from being a whole thing.
2. Make the Filling
In a large bowl, mix the shredded chicken with 1 cup of Monterey Jack cheese. Give it a good stir so the cheese is evenly tucked into the chicken. This helps the filling stay melty and flavorful.
3. Fill and Roll
