Cheesy Stuffed Beef Rolls with Creamy Herb Sauce
This is one of those recipes that sounds like you spent all afternoon in the kitchen… but secretly comes together in under an hour. And the payoff? Big.
These cheesy stuffed beef rolls are tender on the outside, melty and gooey in the middle, and coated in a creamy herb sauce that tastes like pure comfort. The kind of comfort that makes you lean back in your chair after the first bite and do that little “mmm, okay” nod. You know the one.
They’re perfect for a cozy dinner when you want something hearty and satisfying — date night at home, a weekend treat, or even a “let’s make Tuesday feel special” kind of meal. The skillet does most of the work, the sauce smells amazing as it simmers, and the cheese pull when you slice into a roll is honestly the best part.

Ingredients
For the Beef Rolls
1 ½ pounds thinly sliced beef steak (sirloin or flank)
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon Italian seasoning
For the Filling
1 cup shredded mozzarella cheese
½ cup shredded cheddar cheese
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives (optional)
For the Creamy Herb Sauce
2 tablespoons unsalted butter
2 cloves garlic, minced
1 cup heavy cream
¼ cup beef broth
½ cup grated Parmesan cheese
1 tablespoon chopped fresh parsley
½ teaspoon black pepper
Salt, to taste
Instructions
1. Season the beef.
Lay the thinly sliced beef flat on a cutting board. Drizzle with olive oil and rub it around a little so everything’s coated.
Season evenly with salt, pepper, garlic powder, and Italian seasoning. Nothing fancy — just the kind of flavor that makes the kitchen smell instantly inviting.
2. Mix the filling.
In a small bowl, combine the mozzarella, cheddar, parsley, and chives (if you’re using them). It’s a simple mix, but it melts into the dreamiest cheesy center.
3. Fill and roll.
Spoon a generous amount of the cheese mixture onto each slice of beef. Then roll the beef up tightly around the filling.
If the slices are trying to unravel, a toothpick or two will keep everything neatly tucked in. (Totally normal — don’t fight it.)
4. Sear the rolls.
Heat a large skillet over medium-high heat. Add a small drizzle of oil.
Sear the beef rolls on all sides, about 2–3 minutes per side, until they’re nicely browned. You’re not fully cooking them here — you’re building that beautiful flavor and color.
Transfer the rolls to a plate for a moment.
5. Make the creamy herb sauce.
In the same skillet (don’t wipe it out!), melt the butter. Add the garlic and sauté for about 30 seconds, just until fragrant.
Pour in the heavy cream and beef broth, stirring as you go. Let it simmer for 3–4 minutes so it starts to thicken slightly.
6. Add the cheese and herbs.
Stir in the Parmesan, parsley, black pepper, and a pinch of salt. Keep simmering gently until the sauce looks creamy and silky.
At this point, your kitchen will smell like garlic bread’s fancier cousin.
7. Finish cooking the rolls.
Return the beef rolls to the skillet and spoon the sauce over them. Cover the pan and simmer for 8–10 minutes, until the beef is cooked through and the cheese inside is melted and oozy.
8. Serve.
Remove the toothpicks (important!). Spoon extra sauce over the top and sprinkle with a little more parsley.
Serve warm, ideally with something that can scoop up that sauce — mashed potatoes, pasta, or crusty bread are all very welcome here.
Presentation
For a really pretty plate, slice the rolls on a slight angle so you can see that cheesy center. Arrange them in a little line or fan shape, then drizzle sauce over the top like you’re finishing a restaurant dish.
A sprinkle of fresh parsley adds color, and if you want to get a little extra, a few chives on top make it look bright and fresh. Serve it in a shallow bowl so the sauce pools around everything — because honestly, you’ll want every drop.
