Instructions
1. Cook the pasta
Bring a large pot of generously salted water to a boil. Once it’s bubbling away, add the fettuccine and cook until al dente — tender but still with a slight bite.
Before draining, scoop out about 1/2 cup of the pasta water. That little bit of starchy water is liquid gold for adjusting your sauce later. Drain the pasta and set it aside.
2. Season the salmon
Pat the salmon dry with paper towels. This helps it sear beautifully instead of steaming. Season both sides with salt, pepper, paprika, and Italian seasoning.
3. Sear the salmon
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. When the oil shimmers, gently place the salmon in the pan.
Let it cook undisturbed for about 4–5 minutes per side. You’re looking for a golden crust on the outside and flaky, tender fish inside. Remove from the skillet and set aside.
