Italian-Style Meatloaf Stuffed with Melted Cheese
This is the meatloaf you make when you want comfort food… but you also want a little drama (the good kind).
Because the moment you slice into it, there it is: a warm, melty mozzarella center tucked inside a savory Italian-style meatloaf, all glazed with a sweet-and-tangy topping that turns glossy in the oven. It’s cozy, cheesy, and the kind of dinner that makes everyone lean in for a closer look before they even take a bite.
It’s perfect for Sunday dinners, chilly evenings, or any time you want something hearty that feels a bit special without being complicated. And if you’re lucky enough to have leftovers, they make an elite sandwich the next day.

Ingredients
For the Meatloaf
1 pound ground beef
½ pound ground pork
1 cup Italian-style breadcrumbs
½ cup grated Parmesan cheese
½ cup milk
2 large eggs
3 cloves garlic, minced
1 small onion, finely diced
2 tablespoons chopped fresh parsley
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
1 cup shredded mozzarella cheese (for stuffing)
For the Glaze
⅓ cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 teaspoon Dijon mustard
Garnish
Fresh thyme sprigs
Chopped parsley
Instructions
1. Preheat and Prep
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper (my favorite for easy cleanup), or lightly grease a loaf pan if you prefer a more classic shape.
2. Mix the Meatloaf Gently
In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan, milk, eggs, garlic, onion, parsley, Italian seasoning, salt, and pepper.
Mix just until everything comes together. Don’t overwork it — meatloaf stays tender when you treat it gently.
3. Form and Stuff
Place the meat mixture onto your baking sheet and shape it into a rectangle.
Sprinkle the shredded mozzarella down the center in a thick line, leaving a little border at the edges so the cheese doesn’t sneak out while baking.
Now fold the sides over the cheese and shape it into a loaf, pressing and sealing the seams really well. Take an extra minute here — a good seal means the cheese stays inside where it belongs.
4. Whisk Up the Glaze
In a small bowl, stir together ketchup, Worcestershire sauce, brown sugar, and Dijon mustard.
Spread it evenly over the top of the loaf like a shiny little blanket. It’ll bake into a sticky, tangy glaze that makes every slice extra flavorful.
5. Bake
Bake for 50–60 minutes, until the internal temperature reaches 160°F (71°C).
You’ll know it’s close when the glaze looks glossy and slightly caramelized, and the kitchen smells like garlic, herbs, and cozy Italian comfort.
6. Rest Before Slicing
Let the meatloaf rest for 10 minutes before slicing.
This keeps it juicy and helps the cheese set just enough so you get that gorgeous melty center without it completely spilling out everywhere.
7. Garnish and Serve
Slice and top with chopped parsley and a few thyme sprigs for a fresh, pretty finish.
Serve with mashed potatoes, roasted vegetables, or a crisp salad to balance the richness.
Presentation Tips
Slice with a sharp knife and wipe between cuts for clean layers and a clear cheesy center.
Spoon any extra glaze from the pan over the slices right before serving.
Add a sprinkle of Parmesan and parsley on the plate for a little restaurant flair.
For a fun touch, serve with warm marinara on the side for dipping (not traditional, but very good).
