- Salt and black pepper, to taste
For the Roasted Potatoes
- 1 1/2 pounds potatoes, cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried parsley
- Salt and black pepper, to taste
For Serving
- 2 cups green peas, cooked
- Fresh parsley, chopped, for garnish
Instructions
Start with the potatoes. Preheat your oven to 425°F.
Place the potato chunks on a sheet pan or in a baking dish. Drizzle them with olive oil, then sprinkle over the garlic powder, paprika, dried parsley, salt, and black pepper. Toss everything together until the potatoes are nicely coated.
Roast the potatoes for 30 to 35 minutes, turning them halfway through. They should be golden on the outside and soft in the center.
