Steak with Creamy Mushroom Sauce
There’s something deeply comforting about a tender steak covered in a silky mushroom sauce. It feels special enough for a weekend dinner, but it’s simple enough to make on a regular evening when you want something warm, rich, and satisfying.
As the mushrooms brown in butter and the garlic hits the pan, the kitchen fills with that cozy, savory smell that makes everyone wander in asking what’s for dinner. The sauce is creamy, earthy, and just a little tangy from the Dijon mustard — perfect spooned over juicy steak.

Ingredients
- 1 ½ pounds steak, sliced or cut into medallions
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- ½ cup beef broth
- ¾ cup heavy cream
- 1 teaspoon Dijon mustard
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon dried thyme
- Fresh parsley, chopped, for garnish
Instructions
Pat the steak dry with paper towels. Season both sides with salt and black pepper.
Warm the olive oil in a large skillet over medium-high heat. Add the steak and sear for 3 to 4 minutes per side, or until it’s cooked just the way you like it. Transfer the steak to a plate and let it rest.
In the same skillet, add the butter and sliced mushrooms. Cook for 5 to 6 minutes, stirring now and then, until the mushrooms are browned and tender.
Stir in the garlic and dried thyme. Let them cook for about 1 minute, just until fragrant.
Pour in the beef broth and gently scrape up all those browned bits from the bottom of the pan. That’s where so much flavor lives.
Lower the heat slightly, then stir in the heavy cream and Dijon mustard. Let the sauce simmer for 3 to 5 minutes, until it turns creamy and thick enough to spoon over the steak.
Slice the rested steak, spoon the mushroom sauce generously over the top, and finish with fresh parsley.
Presentation
Serve the steak on a wide plate with the creamy mushroom sauce cascading over the slices. A sprinkle of parsley adds a fresh pop of color.
This dish is lovely with mashed potatoes, buttered noodles, roasted vegetables, or warm crusty bread for catching every last bit of sauce.
