Balsamic Chicken Breast with Spinach and Tomatoes
This is one of those “good mood” dinners — the kind that feels light and fresh, but still totally satisfying. Balsamic chicken with spinach and tomatoes is bright, a little tangy, and just sweet enough to taste like something you’d order at a cozy little restaurant… except you’re making it in one skillet on a regular weeknight.
The chicken gets that golden sear, the balsamic bubbles and turns glossy in the pan, and the tomatoes soften until they’re juicy and almost jammy. Then the spinach wilts down into silky green ribbons that soak up all that flavor. It’s the kind of meal that tastes clean and comforting at the same time — perfect when you want dinner to feel special without being heavy.

Ingredients
4 boneless, skinless chicken breasts
Salt and freshly ground black pepper, to taste
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 tablespoons olive oil
3 cloves garlic, minced
⅓ cup balsamic vinegar
1 tablespoon honey (optional, for balance)
1 cup cherry tomatoes, halved
4 cups fresh baby spinach
1 tablespoon unsalted butter (optional, for richness)
Fresh basil or parsley, chopped (for garnish)
Instructions
Season the chicken.
Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and Italian seasoning.Sear until golden.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4–5 minutes per side, until golden and cooked through. Transfer to a plate.Sauté the garlic.
Reduce the heat to medium. Add the minced garlic to the same skillet and sauté for about 30 seconds, just until fragrant.Make the balsamic sauce.
Pour in the balsamic vinegar and add the honey if you’re using it. Stir and let it simmer for 2–3 minutes, until it reduces a bit and starts to look glossy.Add the tomatoes.
Stir in the cherry tomatoes and cook for 2–3 minutes, until they soften and release their juices.Wilt the spinach.
Add the spinach and gently toss until it wilts, about 1 minute. It’ll look like a mountain at first — then it suddenly collapses into the pan like magic.Finish the dish.
Return the chicken to the skillet and spoon the sauce and vegetables over the top. Add the butter if you want extra richness, and let everything simmer together for 2–3 minutes.Serve.
Garnish with fresh basil or parsley and serve right away.
Presentation
This dish is naturally pretty, but a few little details make it pop:
Slice the chicken before serving and fan it out slightly — it looks elegant and catches more sauce.
Spoon extra tomatoes and spinach over the top so every plate looks colorful.
Finish with fresh basil for a bright, fresh aroma (parsley works too).
Serve with rice, quinoa, or roasted potatoes to soak up that balsamic pan sauce.
