Classic Glazed Meatloaf with Mashed Potatoes & Buttered Corn
There’s something about meatloaf night that just feels like home. Maybe it’s the way the sweet and tangy glaze caramelizes in the oven. Maybe it’s the creamy mashed potatoes waiting to soak up every bit of that sauce. Or maybe it’s simply the comfort of sitting down to a plate that feels familiar, hearty, and made with care.
This classic glazed meatloaf is the kind of dinner that brings everyone to the table without needing to call twice. It fills the kitchen with the savory scent of garlic, onions, and herbs as it bakes. And when you brush that glossy glaze on top and slide it back into the oven? Pure magic.
Served with fluffy mashed potatoes and buttery corn, this meal is cozy, satisfying, and timeless — the kind you’ll come back to again and again.

Ingredients
For the Meatloaf
1 ½ pounds ground beef
½ pound ground pork
1 cup breadcrumbs
1 small onion, finely chopped
2 cloves garlic, minced
2 large eggs
½ cup milk
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
For the Glaze
½ cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 teaspoon apple cider vinegar
For the Mashed Potatoes
2 pounds russet or Yukon gold potatoes, peeled and cubed
4 tablespoons butter
½ cup warm milk or cream
½ teaspoon salt
¼ teaspoon black pepper
For the Buttered Corn
4 ears corn, husked
2 tablespoons butter
½ teaspoon salt
1 tablespoon chopped fresh parsley
Instructions
1. Mix the Meatloaf
Preheat your oven to 375°F (190°C).
In a large bowl, combine the ground beef, ground pork, breadcrumbs, onion, garlic, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, and thyme.
Use your hands or a spoon to gently mix everything together. Don’t overwork it — just mix until combined. That keeps the meatloaf tender.
2. Shape and Bake
Transfer the mixture to a lined baking sheet or loaf pan. Shape it into a loaf with your hands, smoothing the top slightly.
Bake for 40 minutes. Your kitchen will already start smelling amazing.
3. Make the Glaze
While the meatloaf is baking, stir together the ketchup, brown sugar, Dijon mustard, and apple cider vinegar in a small bowl.
The mixture should be smooth, slightly thick, and glossy.
4. Glaze and Finish
After 40 minutes, carefully remove the meatloaf from the oven. Spread the glaze evenly over the top, letting it drip just slightly down the sides.
Return it to the oven for another 15–20 minutes, until the internal temperature reaches 160°F (71°C). The glaze will darken a little and become beautifully sticky.
Let the meatloaf rest for about 10 minutes before slicing. This helps it hold its shape and keeps it juicy.
5. Make the Mashed Potatoes
While the meatloaf finishes baking, place the peeled and cubed potatoes in a pot of salted water.
Bring to a boil and cook for 15–20 minutes, until fork-tender.
Drain well, then mash with butter, warm milk, salt, and pepper. Keep mashing until smooth and creamy. Taste and adjust seasoning if needed.
6. Cook the Corn
Bring a pot of salted water to a boil. Add the corn and cook for 8–10 minutes until tender.
Drain and brush each ear generously with butter. Sprinkle with salt and fresh parsley for a bright finish.
7. Serve
Slice the meatloaf into thick, hearty pieces.
Plate it with a generous scoop of mashed potatoes and a buttered ear of corn. Spoon a little extra glaze over the meatloaf for good measure.
Serve warm and watch everyone dig in.
Presentation Tips
Use the back of a spoon to create soft swirls in the mashed potatoes before serving.
Sprinkle a touch of extra parsley over the entire plate for color.
Add a small pat of butter on top of the potatoes just before serving for that classic look.
Serve family-style on a large platter for a cozy, inviting feel.
