Filet Steak with Caramelized Onions & Garlic Mashed Potatoes
This is the kind of dinner that instantly makes an ordinary evening feel like a celebration. A tender filet steak with that golden, buttery sear. Sweet, slow-cooked caramelized onions piled on top. And the dreamiest garlic mashed potatoes on the side — warm, creamy, and the perfect place for pan gravy to puddle and soak in.
It’s cozy and impressive at the same time. The kitchen smells like butter and thyme, the onions turn soft and jammy, and the steak sizzles in the pan like it knows it’s the star of the show. If you’re cooking for someone you love (including yourself), this is one of those meals that feels like a little gift.

Ingredients
For the Steaks:
2 beef filet steaks (6–8 oz each)
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon fresh thyme or dried thyme
For the Caramelized Onions:
2 large onions, thinly sliced
1 tablespoon butter
1 teaspoon brown sugar (optional, for deeper caramelization)
Salt, to taste
For the Garlic Mashed Potatoes:
1½ pounds potatoes, peeled and cubed
3 cloves garlic
3 tablespoons butter
1/2 cup warm milk or cream
Salt and black pepper, to taste
For the Pan Gravy:
1/2 cup beef broth
1 teaspoon Worcestershire-style sauce (non-alcoholic)
1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
Instructions
Start with the mashed potatoes so they’re ready and warm when everything else comes together. Add the cubed potatoes and garlic cloves to a pot of salted water. Bring to a boil and cook for 15–18 minutes, until the potatoes are fork-tender. Drain well, then mash with butter and warm milk (or cream). Season with salt and pepper, cover, and keep warm.
Next, caramelize the onions. Melt butter in a skillet over medium-low heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring now and then, for about 20–25 minutes. They’ll soften, turn golden, and get sweet and jammy. If you want them extra deep and caramel-y, stir in the brown sugar near the end. Set them aside.
Now for the steaks. Pat them dry with paper towels — this helps you get that beautiful sear. Season generously with salt, pepper, and thyme on both sides.
Heat olive oil and butter in a skillet over medium-high heat. When the butter is melted and the pan is hot, add the steaks. Sear for about 3–4 minutes per side for medium-rare, adjusting to your preferred doneness. Try not to move them around too much — let that crust develop. Remove the steaks to a plate and let them rest. (This is where all the juicy magic happens.)
While the steaks rest, make the pan gravy in the same skillet. Pour in the beef broth and scrape up all those browned bits from the bottom. Stir in the Worcestershire-style sauce and let it simmer for 3–4 minutes. If you want it thicker, whisk in the cornstarch slurry and let it bubble for a minute until glossy.
To plate, spoon a generous mound of garlic mashed potatoes onto each plate. Add the steak on top or alongside, pile on those caramelized onions, and drizzle everything with the warm pan gravy.
Presentation
For a restaurant-style finish, top the steak with a little “nest” of caramelized onions and let some gravy trail onto the potatoes. A pinch of fresh thyme and a little cracked black pepper on top makes it look extra polished — simple, but lovely.
Serve immediately while everything is warm and glossy. If you’re adding a side, something green like roasted asparagus or a crisp salad is the perfect contrast to all that rich, buttery goodness.
