French Onion Meatloaf with Gruyère Cheese
If you love French onion soup—the sweet, jammy onions, that cozy thyme-scented broth vibe, and the gooey blanket of melted cheese—this meatloaf is going to feel like your new comfort-food obsession. It’s the kind of dinner that makes the whole kitchen smell like something wonderful is happening.

The onions slowly caramelize until they’re deep golden and almost silky. Then they get tucked into a tender beefy meatloaf with pockets of nutty Gruyère melted throughout. When it comes out of the oven, you add a final layer of onions and more cheese so the top gets bubbly and irresistible. It’s warm, savory, a little fancy-feeling, and still totally weeknight-friendly—especially when served with mashed potatoes that can catch all those juices.
Ingredients
For the Caramelized Onions
2 tablespoons unsalted butter
2 large yellow onions, thinly sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
For the Meatloaf
2 pounds ground beef (80/20 preferred)
1 cup breadcrumbs (plain or panko)
1/2 cup whole milk
2 large eggs
1 tablespoon Worcestershire sauce
1/4 cup ketchup
2 teaspoons garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded Gruyère cheese
2/3 of the caramelized onions (reserve 1/3 for topping)
For the Topping
Remaining caramelized onions
1/2 cup shredded Gruyère cheese
2 tablespoons fresh chopped parsley (optional, for garnish)
Instructions
1) Caramelize the onions
Melt the butter in a large skillet over medium-low heat. Add the sliced onions, salt, pepper, and thyme.
Let them cook slowly for 25–30 minutes, stirring now and then. They’ll soften first, then turn golden, then deeply brown and sweet. Don’t rush this part—it’s where the magic lives.
Once they’re beautifully caramelized, take them off the heat and set aside.
2) Preheat the oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper (or lightly grease a loaf pan).
3) Build the meatloaf mixture
In a large bowl, stir together the breadcrumbs and milk. Let it sit for about 5 minutes so the breadcrumbs soak up the milk—this keeps the meatloaf tender.
Add the ground beef, eggs, Worcestershire sauce, ketchup, garlic powder, onion powder, salt, pepper, shredded Gruyère, and 2/3 of the caramelized onions.
Mix gently with your hands until everything is just combined. Stop as soon as it comes together—overmixing can make meatloaf tough.
4) Shape and bake
Shape the mixture into a loaf on the baking sheet (about 8×4 inches), or press it into your loaf pan.
Bake for 40 minutes.
5) Add the topping
Pull the meatloaf out and spoon the remaining caramelized onions on top. Sprinkle over the extra Gruyère.
Return it to the oven for 15–20 minutes, until the cheese is melted and the internal temperature reaches 160°F (71°C).
6) Rest, slice, and serve
Let the meatloaf rest for 10 minutes before slicing. This helps it stay juicy and makes cleaner slices.
Finish with parsley if you want a little fresh color on top.
Presentation
For that “wow” moment, serve thick slices with the cheesy onion topping facing up so everyone sees that golden, bubbly Gruyère. A sprinkle of parsley adds a pretty pop of green and makes it feel extra special.
This meatloaf loves classic sides: creamy mashed potatoes, roasted carrots, green beans, or even a simple salad with a sharp vinaigrette to balance the richness. If you really want to lean into the French onion vibe, spoon any pan juices over the potatoes—so good.
Conclusion
This French onion meatloaf is comfort food with a little glow-up. You get the deep sweetness of caramelized onions, the savory richness of beef, and that melty Gruyère finish that makes everyone hover near the oven. It’s cozy, satisfying, and honestly hard to stop “taste-testing.”
If you’ve got a quiet evening coming up, put this on the plan. Your future self will be very happy—especially when the leftovers make the best next-day sandwich.
