Grilled Steak with Caramelized Pineapple Glaze
If you’ve never paired steak with pineapple before, let me just say — you’re in for something special.
There’s something about the smoky char of a perfectly cooked steak meeting the sweet, caramelized edges of grilled pineapple that just works. It’s bold and savory, with that little tropical twist that makes dinner feel fun and unexpected. Add a buttery pineapple glaze with garlic, soy, and lime? Now we’re talking about a plate that tastes like summer evenings and backyard grills.
This is the kind of meal you make when you want to impress without overcomplicating things. It’s quick, colorful, and packed with contrast — juicy steak, sticky-sweet glaze, bright herbs, and that irresistible grilled pineapple on top.
Let’s fire it up.

Ingredients
For the Steaks
4 beef strip steaks or sirloin steaks (6–8 ounces each)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon freshly ground black pepper
½ teaspoon smoked paprika
1 teaspoon garlic powder
For the Caramelized Pineapple Topping
4 fresh pineapple rings
1 tablespoon olive oil
2 tablespoons unsalted butter
2 cloves garlic, finely minced
2 tablespoons finely diced red bell pepper
¼ cup pineapple juice
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon fresh lime juice
1 tablespoon chopped fresh parsley or cilantro
Instructions
1. Bring the steaks to room temperature.
Take the steaks out of the fridge about 20–30 minutes before cooking. Pat them dry with paper towels — this helps you get that beautiful crust.
Rub each steak with olive oil. Season evenly with salt, pepper, smoked paprika, and garlic powder. Press the seasoning in gently so it sticks.
2. Grill the pineapple.
Heat a grill pan or skillet over medium-high heat. Lightly brush the pineapple rings with olive oil.
Place them on the hot surface and cook for 2–3 minutes per side. You’re looking for caramelized edges and those gorgeous golden grill marks. The sugars in the pineapple will start to sizzle and brown, and the smell will be sweet and smoky.
Remove and set aside.
3. Cook the steaks.
In the same hot pan or on the grill, add the steaks. Let them cook undisturbed for about 3–4 minutes per side for medium-rare. Adjust the time depending on thickness and your preferred doneness.
Once cooked, transfer them to a plate and let them rest for 5–10 minutes. This keeps the juices inside where they belong.
4. Make the glaze.
Reduce the heat to medium. In the same skillet, melt the butter. Add the minced garlic and cook for about 30 seconds, just until fragrant.
Stir in the diced red bell pepper and sauté for 1–2 minutes until slightly softened.
5. Create the pineapple sauce.
Pour in the pineapple juice, soy sauce, and honey. Let it simmer for 3–4 minutes until it thickens slightly and turns glossy.
Finish with fresh lime juice and chopped herbs. Taste — it should be sweet, savory, and just a little tangy.
6. Assemble and serve.
Place the rested steaks on a serving platter. Top each one with a grilled pineapple ring.
Spoon the warm pineapple glaze generously over the top, letting it drip down the sides. Don’t rush this part — that glossy sauce is the star.
Presentation
For a beautiful finish, sprinkle extra chopped herbs over the steaks for a pop of green. The golden pineapple against the rich brown steak is already eye-catching, but those fresh herbs make it feel vibrant and fresh.
Serve with grilled vegetables, coconut rice, or even crispy roasted potatoes. If you’re hosting, bring the platter straight to the table — that combination of smoky steak and caramelized pineapple is guaranteed to turn heads.
